Ossetra caviar varies in color from deep brown to gold and is one of the most prized types of caviar. 
This Ossetra caviar is produced Malossol style, which means "lightly salted" in Russian. To qulaify as Malossol, the eggs must be salted with no more than 5% salt.
 
Avoid using a silver or stainless-steel cutlery and dishes as it will alter the caviar. Best to use use glass, plastic, mother of pearl, or gold-plated utensils and dishes.
