Well, it’s been a busy few weeks. Between getting out there to markets, preparing both retail and restaurant orders and researching and developing new products, we have been running around like crazy!
We have perfected two new products, which are starting to roll out to a few restaurants around the city. First new product is hot smoked trout. We use only Ocean Wise certified Ontario Rainbow trout, so you can be sure that your smoked trout is a responsible choice. It is then brined in our secret recipe, and smoked over a blend of apple and alder woods until fully cooked and deliciously smoky. Our other new product that is starting to roll out is double maple glazed hot smoked salmon. We start with our 3 star (highest rating) BAP certified Atlantic salmon, which is first lightly cured, then given a glaze of 100% real Canadian maple syrup. It is then smoked for hours over hickory and apple woods while continuing to be glazed throughout the process. Both of these products are available to order, however minimums do apply. If you are interested in customizing a product, we can help with that as well. We are also excited to announce that we will be launching a brand new website hopefully by the end of the week. We are currently just in the finalization stages and working out all the bugs before we launch. We also hope to have an online ordering section up and running in the coming months where you can order and pay right on the website, then arrange with us when you would like to pick up you order!
We are continuing to be present in various farmers markets around the city, so come on by and say hello if you are in the area. This is also a great way to try our signature cold smoked, artificial preservative free, never frozen and hand carved Atlantic salmon as we always have samples. It is a good idea to arrive early as we have been selling out before the markets end!
