Cold Smoked Atlantic Salmon
This is our signature product, and is regarded as the best smoked salmon in Toronto by many top restaurants, private clubs and chefs.
Our atlantic salmon (sourced from ethical and sustainable Canadian sources) is lovingly cured and smoked in a traditional process that lasts almost 3 days. It is then sliced by hand to ensure every slice is uniform and meets our high standards.
We never use any artificial colours, flavours or preservatives and we never freeze our product for optimum freshness.
We also offer pastrami spiced, cajun spiced, peppered or scotch cured by request.
Hot Smoked Rainbow Trout and Hot Smoked Salmon
Our Ontario rainbow trout is cured in our unique brine and hot smoked to bring out its sweet, mild and delicate flavours.
The sides of the trout range from 1/2 lb to just over 1lb and are offered whole and on-the-skin. Peppered and Cajun flavours also available.
We start our hot smoked salmon with the same ethically sourced salmon we use for our cold smoked, but then we brine and hot smoke it to perfection in sizes ranging from 6oz portions up to whole smoked sides averaging approximately 2.5-3 lbs.
Either of these preparations end up with a moist and flaky fish with exceptional smoke flavour.
Bold aromatics define our smoked salt. You can use it to finish your steaks or veggies, salt your fries and popcorn or even rim your daiquiri glasses to add a great smoky flavour to any recipe.
The possibilities are endless with this versatile finishing salt.
